Where to I get inspiration for my recipes? Often it’s things I find while I’m researching the health benefits of a specific food, seeing something that looks good at the grocery store, the farmer’s market (though this can be overwhelming, since everything looks good!), cooking magazines, restaurants, or a great meal at a friend’s house.
And or course, the many amazing websites and food blogs.
I’ve started a list of recipes that look pretty good. Hoping to try them soon (and if you get to any of these before I do, please comment let me know how it turned out)!
- Canal House Lentils
- Moroccan Carrot & Quinoa Salad
- Garbanzo Beans with Spinach and Tomatoes
- Blueberry Muffins
- Pumpkin Spice Muffins with Carrots & Blueberries (changes I’d make: all whole wheat flour, 2 eggs instead of 1 egg white, reduce sugar to 1/2 cup, reduce canola oil to 2 tbsp; also – would adapt to make 12 muffins – who has a 16-muffin pan??)
- Whole Wheat Banana Muffins
- Maple Zucchini Nut Muffins
- Split Pea Soup with Cumin and Caramelized Onions
- Carrot, Cumin, Chickpea Dip
- Baked Frittata With Yogurt, Chard and Green Garlic
- Chard Stalk, Chickpea, Tahini and Yogurt Dip (now I have inspiration for the chard stalks I save in my fridge!).
- Apple Ring Pancakes
- Lentil Burgers
- PEANUT BUTTER BANANA ICEBOX BARS – with Greek Yogurt
- Dried cherry chocolate energy bars (with Greek Yogurt). Notes: look very sweet – reduce sugar to 1 cup and try plain yogurt instead of vanilla yogurt.
- Quick & Easy Breakfast Oat Squares

Flourless Peanut Butter Chocolate Chip Blondies (with 2 cups cannelini beans – curious to see how these will turn out!)
- Chickpea and Winter Vegetable Stew
- Almond chocolate cookies – 4 ingredients! Think I would replace agave with maple syrup.
- Slow cooker pumpkin bread (odd use of a slow cooker – but looks good!).

- Parsley, Red Onion, and Pomegranate Salad (Epicurious)
